Chicken and Sweet Potato Curry

I love making up recipes! This one was a real winner so I thought I would share it with you.

2 large sweet potatoes diced in small chuncks
package of chicken thighs diced
one onion diced
3 cloves of garlic finely chopped
tablespoon or more of curry
salt and pepper to taste
dried or fresh parsley
olive oil
1/2 cup milk or half and half
3 cups Chicken stock
rice noodles

I prepared the rice noodles as directed on the package, strained and rinsed with cold water to prevent them from turning into mush.

put olive oil in sauté pan and allow to heat up on high then reduce heat to medium high... add chicken, onions, garlic, sweet potatoes, curry and salt and pepper.
Cook until onions are clear and chicken is cooked.
Add chicken stock and simmer on low for 20 minutesish....then add cream and parsley right before serving.
run hot water over rice noodles to heat up and put some of those babies in a bowl and ladle in some of the curry deliciousness and yummmmmmmmmmy.

Thinking about this it would be amazing with cilantro instead of parsley but that's the way it goes when you make it up on the fly. Also you can use rice instead of rice noodles.

total cost for this recipie is way under $10 and it serves a lot of people too! Cheap doesn't mean boring!

Isn't life wonderful? Today I watched two old friends reacquaint after an absence unexpectedly in a coffee shop, I spent some time talking to a fabulous girl who I always admired, painted a few pictures and got 80 more 8 by 10 canvases...there are 40 12 by 12s and 20 8 by 20s coming tomorrow too, I made an amazing tomato paste from tomatoes I grew and then made amazing chili using the paste, I got to go grocery shopping which I absolutely love doing...really.... and I got to wear a sweater!!! I love sweater weather.

It was a good day.

I could have said.... I watched two guys sitting together and they were laughing loud, I had to work and have a ton more work to do, I had to make supper for my family, and then I had to go grocery shopping....yuck ... to top it all off it was cold. What happened to summer? urgh.

Which sounds better to you. Life is all about perspective people. Make yours a good one.

Love .... Kim

Love More....please!

Life is funny.

Years ago I was a little more selfish, quite a bit more ego driven and honestly just meaner. I let things like my own insecurities drive me. If I saw someone who was dressed in a not so flattering way I would comment to the person I was with. Sometimes I didn't even consider the feelings of others as long as I was having fun and feeling good. In other words... I was human.

But there is being human and then there is being a human who loves themselves.

Now I love me.

I no longer find the need to belittle any human being. Oh don't get me wrong in my head I say a lot of nasty things but then that little angel on my shoulder reminds me that I need to check my own selfishness and look for something good. Maybe even compliment the person who I was thinking bad thoughts about. Of course I sometimes fail and words I don't really want to say come out but all in all I have really turned that corner and I don't intend on ever going back to my old ways. When I see icky pictures of people taken without their knowledge (like people of Walmart) I am so sad for them. Even if they don't dress how others see fit to dress is it fair to them that they are the target of ridicule from the entire world? I lose a little faith in anyone who participates in that kind of bashing. I wonder if they have ever seen me and said those nasty things about me? I wonder if cameras were around when I was younger if there would be unattractive pictures of me on the internet from my fat high school days? I wonder if they feel better after making someone else feel small or if somehow by being an ass they feel superior to those in the picture? No matter what I just feel icky about them.

I don't want people to ever get that feeling about me going forward in my time on this planet.

So now when I see those pictures I point out to the person who posts them how mean it is. Not to make them feel bad just to remind them of their humanity. It's easy to forget that part of living in this crazy technological age but those people are people. They actually exist. They have kids, parents, sisters, brothers and spouses who love them. They see the comments and cry or worse yet hurt themselves.  Our words hurt or help and they matter.

Use them wisely. Please!

I try to remind myself all of the time by hanging this poster in a spot I see a lot. I want you to do the same. I can't change the world but all of us doing more good collectively can. Lets do this. Lets start spreading love and kindness and combat the hate and anger. Lets start a Kindness Revolution!

Love to you....Kim

WElcome!!

Hey everyone! I've been missing having a place for my long winded rants now that the Persimmons Studio blog is about business and the new digital download stuff! So I thought hmmm I think I have the Kim Geiser blogger name in my list..why not use it? So here I am in all of my crazy soapbox artsy cheap living glory. :)

I am on a huge painting jag right now. In the last month I have bought over 300 canvases and painted and sold many of them and it has been tons and tons of fun! I just ordered 140 more so I'm going to continue painting my little fingers away until I run out of inspiration. I'm still planning on doing the Elkhart Lake Farmers Market through September and want to have lots of paintings done for my epic road trip to Connecticut with one of my favorite ladies Vanessa KIKI! So much fun stuff coming I'm very very excited!

So anyways I may not post a ton on this blog but I promise it will be 100% Kim and 100% unfiltered and sassy. ;)

Until next time....be nice and buy art.
